這次新政 2021 頒布會 PART I 主題是「Fermentation Report of the Brewing Yeast "No.6"」：六號酵母的釀造理論與實踐。這款是2021 頒布會於五月首發的第一卷，分別採用「木桶仕込製法」和「低精米度白酒」製法，日本店一律需抽選販售，極為限量！

「生酛」是目前釀造酒母最古老的方式，須耗費四周的時間產生酒母，並且需要藏人站在小木桶的周圍，使用「櫂」將蒸米，米麹和水混的液體攪拌，順利完成酵母的完成。這古老釀造日本酒的傳統方式，由於耗費很多的人力，目前僅少數的酒造堅持此釀酒方式。生酛整體的口感偏複雜﹑輕酸的口感來自於天然乳酸。此酒沒有經過火入處理(生酒)，在裝瓶前亦選擇不加入釀造用水去稀釋酒體(原酒)，香氣及口感上更富層次感，相比一般有做水割(加水)的酒，更保留原有的風味。

一般來說，精米過後的酒米都會呈現圓球形，但米原先的形狀是橢圓形的，因此一般精米的技術亦會將適用於釀酒的(心白)部分磨掉，而非適用於釀酒的部分(米身外圍)也會被保留下來。「新政」以更精緻的精米技術 — 扁平精米，將酒造好適米的原有形狀及可用範圍盡可能保留下來，更完美地保留最重要的米的中心部分(心白)，即使精米步合度相同，使用扁平精米的酒米釀出來的酒，味道會較般一般精米技術為清澈且滑順。
